The name Sciare is the Sicilian term for terrain which has emerged from the effects of lava flow. Romano Vincenzo's "Le Sciare Novecento" is made from a selection of olives of the Nocellara dell Etna variety, Tonda Iblea, Biancolilla grown at a height in excess of 900 metres above sea level, on the slopes of Mount Etna, Europe's highest active volcano, on the island of Sicily. The percentages percentages of each variety varies from year to year.
The early harvest takes place in October and the result is a delicious oil, opalescent with intense green hues. Aromas are medium fruity with a sense of freshly cut grass. To taste, it has bitterness balanced with spiciness and a tomato aftertaste;
An excellent choice as a dipping oil, on fresh salads and as a seasoning for legumes and roasts.
