Novo is a 100% Picual extra virgin olive oil. For Nobleza del Sur, it is the first EVOO of the year collected from olive groves in a specially selected area on the Vista Alegre Farm in Jaén. The Novo oil has a striking green olive colour and great aromatic complexity with hint of the vegetation that can be found in the olive grove, There are notes of olive leaf, wheat grass, lavender, fruity notes of tomato and green banana, green apple and green almond. In mouth it is well balanced, with a fruity beginning followed by slightly bitter and spicy sensations. Overall it is a well-balanced, elegant. Delicious!

The Novo oil is cold extracted, with very low levels of acidity. It is well matched with most of meat dishes, fish and shellfish, pastas and pizzas. It also works well as an excellent seasoning, for example on salads.
