At Château d’Estoublon, located in the heart of the Alpilles mountain range since 1489, the great Provençal olive varieties are king. Together, they give the essence of the Baux-de-Provence terroir with its unique blend of complexity and freshness.
The farming is carried out in a way which is sustainable and respectful of nature. The harvest takes place from early November to mid-December using cold extraction at their Domaine mill. The result is a fantastic Organic extra virgin olive oil.
On the palate, this oil blend is balanced and intense. There are hints of freshly cut grass and a slightly spicy finish. It is a fine blend of the different olive varieties used: Picholine, Béruguette, Salonenque, Bouteillan and Grossane. The oil has flavours that transport you to the heart of Provence which are ideal for enhancing Mediterranean cuisine with character. It is excellent served on green vegetables, in a salad or with grilled white meats.

smooth, very smooth......
This is a lovely, lively oil, very smooth and robust. As a sipping oil it is excellent - be prepared for the "kick".
The bottle is a bonus - very elegant, like the oil. I may make this oil a long-term friend once I have done trying everything else.
