At Château d’Estoublon, located in the heart of the Alpilles mountain range since 1489, the great Provençal olive varieties are king. Together, they give the essence of the Baux-de-Provence terroir with its unique blend of complexity and freshness.

This is a fabulous unfiltered early harvest oil made from a blend of Salonenque, Béruguette, Picholine, Grossane and Bouteillan olive varieties.

Freshly pressed, with a pronounced green fruitiness and a velvety texture. On the palate, it reveals notes of freshly cut grass, lifted by subtle aromas of raw artichoke and hazelnut.

Perfect for enhancing characterful Mediterranean cuisine, where it truly comes into its own: on a sea bream carpaccio, a salad of crunchy green vegetables, or a bruschetta with raw artichoke, rocket and Parmesan.
