Coming from Cáceres, Manzanilla is fully adapted to the local soils and conditions, yielding a unique juice, which is hard to mistake with other varietals, since it features some very special characteristics. It has a fine and soft structure, it is balanced between bitterness and spiciness - ideal oil for those seeking persistence in the mouth. With intense fruitiness, it brings flavours such as tomato leaf, chicory and basil.
The intense fruitiness of this extra virgin oil makes it highly recommended for pairing with fatty fish recipes such as papillote salmon or tuna with onions. It is ideal in the preparation of sauces such as bolognese, Spanish sauce or pesto. It also enhances complex preparations of pasta - try it on a vegetable lasagna and some ricotta ravioli.
