The Azienda Agricola Fois, on behalf of Accademia Olearia, cultivates its own olive groves in the countryside of Alghero and the surrounding area, on the island of Sardinia. The total area of their groves is approximately 230 hectares and comprising nearly 25,000 trees.
The cultivar most widely farmed is the so-called Bosana, typical of Sardinia and, in particular, of the northern part of the island. This cultivar is characterised by a constant production over the years and a high oil yield.
The olives produce an extra-virgin oil that is golden yellow with greenish glints. It has an elegant, fruity, medium intensity, herbaceous flavour which surprises the palate with its fresh taste and harmonious bitter and spicy notes. This is an oil with a herbaceous aroma which releases notes of apple and white fruit in the mouth, especially towards the end.
Alongside the Bosana cultivar, other minor varieties are cultivated, such as Semidana, Tonda di Cagliari and Nera di Oliena, from which excellent monocultivar oils are obtained.
Between October and November each year the olives are harvested using mechanical means designed to prevent damage to the trees and allow the fruit to be picked intact and at its right stage of ripeness.
