'il Novello' is Accademia Olearia's first olive oil of the new harvest, freshly pressed and immediately bottled to retain its lively fragrance. This oil is made from the Bosana olive cultivar, without any filtering or decanting, resulting in a fresh and intense green olive oil.
Satisfying to the most demanding palates, ‘il Novello’ is full-bodied with a strong and intense taste. Its green colour is due to the absence of filtering and its characteristic flavour makes it well suited to finishing soups, fish and grilled meats as well as an excellent oil for dressing salads.
