The organic DOP from Accademia Olearia is made largely from the Bosana cultivar. These are harvested at the early ripening stage. The result is a green fruity extra virgin olive oil with a robust flavour and pronounced notes of artichoke and thistle. The taste is distinguished by its intense tones and balanced by a pleasant bitterness and spiciness.
